Peg’s Tomato-Bacon Pie
Directions:
Layer tomato slices in pie crust. Season to taste with salt and pepper. Top with onions, basil and bacon. In a bowl, mix together mayonnaise and cheese; spread over bacon. Bake, uncovered, at 350 degrees for 30 minutes, or until lightly golden.

Ingredients:
2 to 3 tomatoes peeled and sliced
9-inch pie crust, baked
salt and pepper to taste
1/2 c. green onions, chopped
1/3 c. fresh basil, chopped
1/2 c. bacon, crisply cooked and crumbled
1 c. mayonnaise
1 c. shredded Cheddar cheese
Quick & Easy Lemon Bars
Directions:
Combine dry cake mix and pie filling in a large bowl; mix well. Spread in a greased 15″x10″ jelly-roll pan; top with pecans or coconut, if desired. Bake at 350 degrees for 30 minutes. Let cool; cut into bars.
